Try these great recipes:

BROWN RICE WITH AVOCADO SALAD

Serves: 4

 2 cups pre-cooked brown rice

2 - 3 ripe avocados

1 onion, finely chopped

1/4 cup finely chopped celery

˝ cup cooked peas

small can rice kernels

1 carrot, finely chopped

1 red capsicum, finely chopped

 

Dressing:

1 tblsp Apple Cider Vinegar

1/3 cup olive oil

juice of 1 lemon

Italian Spice Seasoning

 

       Combine all ingredients for salad and prepare dressing.

 

Put all ingredients for dressing in a jar and shake vigorously.

 

Pour dressing over combined ingredients and chill until ready to serve.

 

 

QUICK SULTANA BREAD

  

This is a must for those times when you need to cook but don't want to cook… but still need something that looks and tastes good. Slice it and spread it with butter or margarine. Cut slices in two to make it go further. Before you know it you've got a decent-looking plate to take to that boring function. You won't feel all stressed out because you spent more time on preparing the plate than you spent preparing yourself to look beautiful for all those bores you're going to knock the socks off! And, it is healthier than most goodies you take on such occasions!

 

1 cup unprocessed bran

1/4 cup sultanas

˝ cup raw sugar

1 cup milk, more if necessary

1 cup wholemeal SR Flour

 

Combine bran, sultanas, sugar & milk in a bowl, leave for 1 hour. Add flour and extra milk if mixture is too dry then bake in loaf tin in mod oven 30 - 45 mins or until cooked.

 

 

BANANA HEALTH CAKE

 

The verdict is always the same - it's delicious!

 

125g butter or margarine

1cup raw sugar

3 eggs

2 - 3 medium bananas

1/3 cup coconut

1/4 cup unprocessed bran

1 ˝ cups wholemeal SR Flour

˝ cup milk

 

Cream butter and sugar until light and fluffy. Add eggs one at a time, beat well after each addition. Stir in mashed bananas, coconut & bran. Stir in half the sifted flour & milk, stir well then all remaining milk & bran, together with any husks from the sifter.

 

Bake in 20cm ring pan in mod oven about 40 - 45 mins or until cooked when tested. Stand in pan 5 mins before turning out.
